I've been eating tomatoes like it's my job lately. There are so many varieties of heirlooms and they're at their peak right now and couldn't possibly taste more like heaven. This recipe is a twist on the classic Caprese salad and helps to highlight the bright flavors of the perfectly ripe tomato.
What you need:
- 1 large heirloom tomato
- 1 half of an avocado
- fresh mozzarella
- olive oil
What to do:
- Slice the tomato, avocado and fresh mozzarella so that you have an equal amount of each.
- Arrange the slices on a plate, alternating between tomato, avocado and mozzarella.
- Sprinkle salt and pepper on the tomato, avocado and mozzarella and drizzle with olive oil.
