It is really hot and humid here. It's that kind of weather where it's impossible to turn your stove on for fear of heating up your entire apartment. As a result, I've been making a lot of food that can either go through a food processor, a blender, or just relying on easy salads.
This salsa fits all of my requirements and also happens to be delicious, healthy, and really easy to make. The lycopene in the tomatoes may do great things for your skin by way of helping to protect your skin from harmful sun damage, the garlic and onion act as natural antibiotics, and the capsaicin from the jalapeno can help to increase healthy blood flow. And that's only a few of the good things that this salsa can do.
Here's what you need:
- 2 organic vine-ripened tomatoes
- half of a jalapeno, seeds removed
- 1/4 red onion
- 1 cup cilantro
- 1 clove of garlic
- salt and pepper to taste
Here's what you do:
- Combine the tomatoes, jalapeno, onion, cilantro and garlic in a food processor or blender and pulse until blended
- Add salt and pepper to taste.
