I am really loving the CSA I joined. I get so many vegetables, and every week there is a new one that forces me to do some internet research to figure out what the heck to do with it. That vegetable this week was the rutabaga, a cross between cabbage and a turnip. Pretty weird right? Turns out it's sort of actually more like a potato, at least in terms of what you can cook with it.
Rutabagas are very popular in Scandinavian countries and can be used in any recipe that calls for a root vegetable. Rutabagas are very low in calories, high in fiber and high in Vitamin C. They are by no means a super vegetable, but they're pretty tasty.
